Shiso

Shiso, also known as Perilla frutescens, is a leafy herb from the mint family, prominently featured in Japanese, Korean, and Southeast Asian cuisine. The plant bears broad, jagged leaves which are either green or purple. Shiso is distinguished by its unique flavor and scent profile which combines elements from several familiar herbs and spices.

The scent of shiso is complex and refreshing: it shares the sharpness of mint and the pungency of basil with a hint of cinnamon's warmth. Additionally, some detect citrus-like undertones, often compared to lemon or lime. This aromatic blend gives shiso its distinctive, invigorating fragrance which enhances its popularity in culinary uses. Often used fresh, shiso leaves can be found garnishing sushi, mixed into salads, or incorporated into meats to impart its vibrant, herbaceous kick. Its aroma is as vital as its taste, contributing to the sensory experience of the dishes it complements.
