Rock Sugar

Rock sugar, also known as rock candy or crystal sugar, is a type of confection made from large sugar crystals that are formed by allowing a supersaturated solution of sugar and water to crystallize onto a surface such as a string or stick. It is often used as a sweetener in beverages and desserts.

The scent profile of rock sugar is primarily sweet with a pure, clean sugar aroma. It lacks the complexity of raw sugars, such as muscovado or demerara, which contain molasses. Rock sugar is more refined and therefore the smell is closer to that of plain white sugar, but even milder due to its solid, crystalline form.

Rock sugar does not have a strong distinct scent like honey or other flavored sugars; it's more notable for its appearance and texture rather than its aroma. When dissolved in liquids, it imparts a sweet taste without altering the flavor profile of the drink or dish, making it ideal for sweetening without overpowering other ingredients.
