Jackfruit

Jackfruit is a large, tropical fruit native to South and Southeast Asia, recognizable by its spiky, green exterior and significantly large size, often weighing up to 80 pounds. The inside of the jackfruit is composed of multiple edible bulbs or pods, surrounded by a fibrous, sticky pulp. These pods are yellow when ripe and contain seeds that can also be cooked and eaten.

The scent profile of ripe jackfruit is complex and distinctive, often being described as a combination of fruits including banana, pineapple, and mango, which gives it a sweet, fruity aroma. Some people also note hints of peach or Juicy Fruit gum. The smell can be quite pungent and strong, particularly when the fruit is very ripe. Unripe jackfruit, often used in savory dishes, has a more neutral scent, akin to chicken or pork, which makes it a popular meat substitute in vegetarian and vegan cuisines. However, its scent when cooked can become more pronounced, showcasing its sweet and fruity qualities even in savory dishes.
