Coffee berry, derived from the fruit of the coffee plant, Coffea arabica, consists primarily of the outer shell that encloses the coffee beans. The berries are typically small, resembling cherries in size, and progress from green to bright red or purple as they ripen, indicating their readiness for harvest.

Unlike the robust, earthy aroma of prepared coffee, the scent profile of fresh coffee berries is surprisingly different. Upon initial smell, the berries emit a mildly sweet and fruity fragrance. This can best be described as a blend of floral and berry-like notes, with hints of citrus or tropical fruits. The aromatic subtlety offers a lightness that is starkly contrasted against the deep and rich aromas of the roasted beans.

During processing, the pulp from coffee berries, known as cascara when dried, can emit a slightly tart and sweet smell, reminiscent of dried fruits with subtle earthy undertones. This makes it popular for various infusions and teas, showcasing its versatility beyond the traditional uses of coffee beans themselves.
